• Ingredients:
    • 2 tbsp sesame oil, divided
    • 1 small knob of ginger, peeled and sliced
    • 6 cloves of garlic, peeled and crushed or sliced
    • 2 scallions, roughly chopped
    • 3 dried chilis (optional)
    • ~1lb dark meat chicken, cut into bite-sized pieces
    • 1 tbsp brown or coconut sugar
    • ~1/3 cup rice wine
    • ~3 tbsp soy sauce
    • 1 cup fresh basil leaves
  • Instructions:
    1. Fry aromatics in 2/3 of the sesame oil over high heat in a wok or large frying pan.
    2. Add chicken, cook until starting to brown.
    3. Sprinkle in sugar, followed by rice wine and soy sauce. Stir and simmer until sauce is desired consistency.
    4. Serve over rice or noodles.
