- Ingredients:
- 2 tbsp sesame oil, divided
- 1 small knob of ginger, peeled and sliced
- 6 cloves of garlic, peeled and crushed or sliced
- 2 scallions, roughly chopped
- 3 dried chilis (optional)
- ~1lb dark meat chicken, cut into bite-sized pieces
- 1 tbsp brown or coconut sugar
- ~1/3 cup rice wine
- ~3 tbsp soy sauce
- 1 cup fresh basil leaves
- Instructions:
- Fry aromatics in 2/3 of the sesame oil over high heat in a wok or large frying pan.
- Add chicken, cook until starting to brown.
- Sprinkle in sugar, followed by rice wine and soy sauce. Stir and simmer until sauce is desired consistency.
- Serve over rice or noodles.
