One-Pan Breakfast Beans 🍅🥣

A flavorful, nutrient-packed dish perfect for any meal!

Ingredients (Makes 3 servings)

Base:

• 3-4 tbsp extra virgin olive oil

• 1 white onion, sliced

• 1 leek (white & light green parts), cut into half-moons

• 250g chestnut mushrooms, finely chopped

• 5 garlic cloves, minced

• 2 tsp smoked paprika

• 1 tsp cumin

• 1 tsp coriander

• 700g white beans + their juices (If unsalted, add ½ ground veg stock cube)

• 3-4 medium tomatoes, sliced

Sauce:

• 280g silken tofu

• 20g nutritional yeast (nooch)

• 35g raw cashews or sunflower seeds (soaked in boiling water for 10 mins, then drained)

• 1 garlic clove or 1 tsp garlic powder
