Chop 1/2 onion finely and cook in 2 teaspoons of olive oil. A handful of frozen peas, 1/2 swead, 1 large carrot, 1 large leak, 3 chunks of cauliflower, Chop all veg finely. 1 vegatable stock cube, generous salt and pepper, 1 1/2 pints of water. I put into soup maker and it cooks and blends but if you don't have one boil up in large saucepan and when cooked (30 mins) blend and serve piping hot. Feeds 4.
