Ingredients:
- 14 oz artichoke hearts, drained & chopped
- 1 (16 oz) bag frozen spinach, thawed & drained
- 1 cup non-fat plain Greek yogurt
- 1/2 cup small curd cottage cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/2 tsp pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
Instructions:
- Preheat oven to 400°F.
- Mix all ingredients in a large bowl.
- Spray ramekins with avocado oil spray. Pour mixture into ramekins.
- Top with extra cheese. Bake for 25–30 minutes.
- Broil for 2–3 minutes to brown the top. Serve warm.
