Ria Gandhi | π™Šπ™£π™‘π™žπ™£π™š π˜Ύπ™€π™–π™˜π™/ π™‹π™šπ™§π™¨π™€π™£π™–π™‘ π™π™§π™–π™žπ™£π™šπ™§ on Instagram: "HIGH PROTEIN COURGETTE LASAGNA 🍝πŸ₯’ Naturally low in cals n carbs | Super high in protein I’ve tried both beef and turkey & both were DELICIOUS 🀀 C: 327cals / P: 42g (per serving) Serves 4: πŸ₯’Low cal cooking spray 2/3 large courgettes, sliced about 1/4 inch thick πŸ…For the sauce: Low cal oil spray 3 cloves garlic, minced 1 small white onion, diced 500g 5% beef mince or lean turkey mince 400g tinned tomato 4 tablespoons tomato paste 2 teaspoon dried oregano Small handful of basil, finely chopped 1 teaspoon paprika Red pepper flakes, if desired 1 teaspoon salt Lots of freshly ground black pepper 100g butternut squash (optional) πŸ§€For the cheese sauce: 200g low fat cottage cheese 1 egg 3-4 tablespoons grated parmesan cheese salt and pepper 4 tablespoons shredded mozzarella cheese (light) Method: πŸ₯’Courgettes: * Preheat oven to 190 C * Use a Y peeler to create thin ribbons of courgette. * Pat ribbons dry using a clean piece of kitchen roll, place onto a greased baking tray and sprinkle with salt. * Pop into the oven for 15-20 mins until dry. Do not skip this step. πŸ…Tomato Sauce: * Spray a non-stick pan with oil. Add in the garlic and white onion, fry until golden brown. * Add your beef or turkey into the pan and cook on a medium heat until browned all over. * Pour in the tinned tomatoes, tomato paste, oregano, paprika, basil, parsley and pepper. * Simmer on a low heat for at least 20 minutes until THICK. * Add salt to taste. * Remove from heat to thicken and cool. πŸ§€Cheese Sauce: * Blend cottage cheese, mozzarella and egg in a processor or blender. * Stir in the parmesan and add salt and pepper to taste. Assembly: * Start by adding your tomato sauce into a baking dish (I used 11x7”) * Layer your courgettes until sauce is covered. * Generously top with your cheese sauce. * Repeat this until you have three layers of each.
