1 cup plain Greek yogurt
1 large egg
⅓ cup honey
1 cup old-fashioned rolled oats
¾ cup whole wheat flour (or white whole wheat flour)
¼ cup milk
1 teaspoon baking powder
½ teaspoon baking soda
¼ cup (57g) melted coconut oil
1 cup (170g) blueberries
¼ teaspoon cinnamon (optional)
1 teaspoon vanilla extract (optional)
Preheat the oven to 180°C (350°F)
In a bowl, whisk together the yoghurt, egg, milk, honey, and (if using) vanilla extract.
In another bowl, whisk the oats, flour, baking powder, baking soda, and cinnamon (optional). Gently stir in the blueberries.
Combine the wet and dry ingredients, then add the coconut oil. Stir by hand until just combined (avoid using an electric whisk for a fluffier texture!).
Pour the batter into 12 muffin cases. Bake for 14-17 minutes, until muffin tops spring back when touched, or a toothpick inserted comes out clean.
