Ingredients: ▪ 2 portions noodles ▪ 1-2 tbsp peanut butter ▪ 1 tbsp miso paste ▪ Sesame oil ▪ 1 tsp grated ginger ▪ 1 tsp grated garlic ▪ Chilli flakes ▪ 600ml veg stock liquid ▪ 200ml coconut milk ▪ Soy sauce ▪ Pak choi ▪ Chilli oil ▪ Toppings: coriander, charred sweetcorn, spring onion, sesame seeds ◦ Instructions: 1. Fry garlic, ginger, and chilli flakes in sesame oil. 2. Mix peanut butter and miso paste with hot water, add to pan. 3. Add coconut milk and veg stock, season to taste. 4. Cook noodles and pak choi in liquid. 5. Serve with chilli oil and garnishes.
