Ingredients:
- 450 g ground chicken
- 2 eggs
- 80 ml almond flour
- 120 ml grated Parmesan
- 120 ml grated mozzarella
- 1 zucchini, grated and wrung dry
- 30 ml fresh chives, chopped
- 30 ml fresh parsley, chopped
- 2.5 ml garlic powder
- Salt and pepper, to taste
Creamy Cauliflower Mash:
- 1 head cauliflower, chopped
- 3 garlic cloves
- 45-60 ml unsweetened almond milk
- 60 ml Parmesan cheese
- 15-30 ml ghee
Directions:
- Mix all fritter ingredients well to combine. Form 2-3 inch patties.
- Heat 7.5 ml avocado oil in a large non-stick pan over medium-high heat. Cook patties until brown on both sides, about 6-8 minutes.
