• Ingredients:
    • For the Chicken:
      • 1 lb chicken breasts, cut into bite-sized pieces
      • 1 tbsp soy sauce
      • 1 tsp cornstarch
    • For the Sauce:
      • 3 tbsp soy sauce
      • 1 tbsp oyster sauce
      • 1 tbsp hoisin sauce
      • 1-2 tsp sugar
      • 1 tsp rice vinegar
      • ½ cup chicken broth
    • For the Stir-Fry:
      • 2 tbsp vegetable oil
      • 1 medium onion, chopped
      • 3 garlic cloves, minced
      • 1-inch ginger, minced
      • 1 red bell pepper, sliced
      • ½ cup unsalted roasted cashews
      • 1-2 green onions, chopped
      • 1 tsp cornstarch mixed with 1 tbsp water
  • Instructions:
    1. Marinate chicken with soy sauce and cornstarch for 10 minutes.
    2. Prepare sauce by combining soy sauce, oyster sauce, hoisin sauce, sugar, rice vinegar, and chicken broth.
    3. Cook chicken in oil until golden, set aside.
    4. Sauté onion, garlic, and ginger, add bell pepper.
    5. Return chicken, add sauce, cashews, and green onions. Thicken with cornstarch slurry.
    6. Serve hot over rice.
