- Ingredients:
- For the Chicken:
- 1 lb chicken breasts, cut into bite-sized pieces
- 1 tbsp soy sauce
- 1 tsp cornstarch
- For the Sauce:
- 3 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp hoisin sauce
- 1-2 tsp sugar
- 1 tsp rice vinegar
- ½ cup chicken broth
- For the Stir-Fry:
- 2 tbsp vegetable oil
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 1-inch ginger, minced
- 1 red bell pepper, sliced
- ½ cup unsalted roasted cashews
- 1-2 green onions, chopped
- 1 tsp cornstarch mixed with 1 tbsp water
- Instructions:
- Marinate chicken with soy sauce and cornstarch for 10 minutes.
- Prepare sauce by combining soy sauce, oyster sauce, hoisin sauce, sugar, rice vinegar, and chicken broth.
- Cook chicken in oil until golden, set aside.
- Sauté onion, garlic, and ginger, add bell pepper.
- Return chicken, add sauce, cashews, and green onions. Thicken with cornstarch slurry.
- Serve hot over rice.
