Baked Fennel & Cannellini Beans 🧄🧀🍋

A warm, comforting dish that works in any season!

Ingredients

• 2-3 fennel bulbs, sliced into thin wedges

• 1 brown onion, finely sliced

• 1 large jar cannellini beans, drained

• 1 cup milk of choice (adjust as needed)

• 6 sprigs fresh thyme (buds removed from stems)

• 100g grated Parmesan (or any cheese you like)

• ½ cup panko breadcrumbs (or any breadcrumbs)

• 2 lemons

• Olive oil

• Salt & pepper

Method

  1. Preheat oven to 180°C (fan).

  2. Prepare the Tray – Spread fennel, onion, and cannellini beans on a large baking tray.

  3. Season & Mix – Drizzle generously with olive oil, add salt, pepper, and thyme. Mix well and spread evenly.

  4. Add Liquid – Pour the milk over everything and squeeze in 1 lemon.

  5. Cheese & Breadcrumbs – Top with loads of Parmesan. In a small bowl, mix breadcrumbs with olive oil, then scatter over the top.
