Hannah Naismith on Instagram: "This is not your basic banana bread 💅 In this house, we always think about how to add fibre in a way that only ADDS to the texture, not makes it worse. I’m not much of a baker, but this recipe is pretty fool proof - add more or less sweetness etc. Ingredients: - 2 cups oat flour (you can grind your own using a spice grinder. I bought mine from Kmart (they sell it as a coffee grinder 😂)) - ½ cup flaxseed meal - 1 teaspoon baking soda - ½ teaspoon salt - ½ teaspoon cinnamon - 1 teaspoon vanilla extract - 5 tablespoon coconut oil, melted - ½ cup honey/maple syrup - ~ 4 bananas - 2 eggs - As much chopped dark chocolate as your heart desires! Recipe: 1. Preheat oven to 180° C 2. Combine dry ingredients in a bowl - whisk well until combined 3. Whisk the eggs in a separate bowl 4. In another bowl, mash the banana 5. Add the eggs into the banana, along with the coconut oil, and honey/maple syrup 6. Add the dry ingredients into the wet ingredients 7. Stir in the chopped chocolate 8. Grease a 9×5-inch loaf pan and line with baking paper 9. Bake for ~50 minutes or until a toothpick inserted into the centre comes out clean"
